Can I great tow MX record one with 0 priority point to the firebox and other to Microsoft record because as you know updating MX record same time take up to 48 hours and I don't want to lose any email

Assumption is that if the mail server pulled the old record, that it'd be pointing at office 365, so if it pulled the old record, it'd still go there.

You can create as many MX records as you want but don't have to. You won't lose email. As James said, sender's mail servers will either send it to the old MX record or the new.
