Application Control has an entry for AnyDesk in "Remote access terminals".
If you have App Control, you can enable it for a policy allowing remote mote access, and enable "logging for reports" which should show "app_cat_name=anydesk" fro allowed anydesk access.
If the access is to an external site for anydesk, then you can have a policy To: a FQDN entry of *.anydesk.com, and then enable logging on this policy.
